Fat Oils and Grease Program
The City of Wichita would like to make you aware of an important change regarding the Grease Inspection program. Effective October 1, 2009, the City’s Grease program is moving from the Water Utilities Department to the Office of Environmental Health, under the Food Safety program. This change will affect every food service establishment that has an in-ground Grease Interceptor, an Automatic Grease Removal Device (including “Big Dippers”), or a Grease Trap. Food service establishments which do not have any of these devices may also direct any future questions regarding the grease program to Environmental Services. Please review the section below that applies to the equipment in your facility to learn how this change will affect your day-to-day operation. Facilities with GREASE INTERCEPTORS A Grease Interceptor (GI) is typically located outside and underground and is accessible through manhole covers. The levels of floatable grease and settable solids must be measured once a month on the outlet side of the GI using a Dip Stik Pro or approved equivalent. Grease interceptors need to be pumped by grease haulers or recyclers at least once per quarter-year (every three months). A maintenance log must be maintained and submitted to The Office of Environmental Health each quarter. The log must include the date, time, amount of waste pumped from the tank, hauler and disposal site, and monthly inspection results of the floatable grease and settable solids levels in inches. The maintenance log must be kept in a conspicuous location and made immediately available to any Food/ Grease inspector upon request. Facilities with Automatic Grease Removal Devices Automatic Grease Removal Devices (AGRD), such as Big Dippers or Grease Stoppers, have components such as belts, wheels, or skimmers to actively remove the floatable grease from the waste stream. It is essential to monitor and clean these devices at least once per shift. In order to ensure proper functioning, the basket must be emptied of solids (food scraps) and the blades cleared of grease every shift. The entire contents of the AGRD should be removed with a wet/ dry vacuum once a week. To request a detailed AGRD maintenance description, please contact The Office of Environmental Health at 268-8351. A maintenance log must be maintained and submitted to The Office of Environmental Health each quarter. The log must include the cleaning date and time, and additional service events such as replacing the timer, vacuuming the AGRD, etc. The maintenance log must be kept in a conspicuous location and made immediately available to any Food/ Grease inspector upon request. Facilities with Hydromechanical Grease Interceptors (Grease Traps) The City of Wichita ordinance does not allow installation of these units. Some units may have been installed prior to the adoption of the ordinance. Existing units that were installed prior to the adoption of the current ordinance must be replaced if not properly maintained. If traps are located at your facility, they must be maintained on a daily basis by dipping the accumulated grease out of the interceptor and storing in an airtight container. The sides and baffles should be scraped off and accumulated solids removed. A maintenance log must be maintained and submitted to The Office of Environmental Health each quarter. The log must include the cleaning date and time and any additional service events. The maintenance log must be kept in a conspicuous location and made immediately available to any Food/ Grease inspector upon request. Maintenance and Upkeep Responsibility It is the food service responsibility to monitor, service, and maintain all applicable the grease removal devices (interceptors) and keep records of all service activities. Failure to adequately maintain the device and/or keep and submit maintenance logs within the required timeframes, will result in violation notices with penalties of up to $1,000 per day per violation. Food service establishments can either perform these activities in house or contract with a professional service provider to perform the required activities. Attached is list of service providers who are known to perform the work. The City provides this list as a service to the Food establishments to assist in complying with Title 16, Section 16.24 of the City Code. This list may not be all inclusive.
