The City of Wichita Fire Department would like to remind citizens who will be deep fat frying turkeys for Thanksgiving to use extreme caution. A turkey partially wet or completely wet, immersed in a pot of hot oil will produce a volatile reaction. This reaction may be great enough to cause the oil to come in contact with the open flame and cause a large fire. The department recommends the following safety suggestions: Keep children away from the cooking area. Do not fry the turkey on a combustible surface such as a deck or inside the garage. Move away from the house. Never put your face directly over the pot. Protect your hands and arms with gloves and long sleeve clothing or other protective type clothing. Always use the suggested cooking type oil and remember, “Oil and Water don’t mix.” The City of Wichita wishes everyone a safe and happy Thanksgiving.
